Diabetic-Friendly Oatmeal Cookies
Sugar-free oakmeal cookies
Ingredients:
- 2 eggs
- 1C whole wheat flour
- 1C rolled oats
- 1C unsweetened applesauce
- Optional 1/2C diced low-medium-glycemic fresh fuit (rubarb, apples, strawberries, cranberries, apricots, etc.)
- 1/3C vegetable oil
- 1/4C water
- 1/4C finely chopped nuts
- 1t ground cinnamon
- 1t vanilla extract
- 1t baking powder
- 1/2t baking soda
- 1/4t ground nutmeg

- 1/4t ground allspice
- 1/4t ground cloves
Steps:
- Preheat oven to 375°
- Combine all ingredients except the baking powder and baking soda in a mixing bowl.
- Beat well.
- Mix in the baking powder and baking soda
- Drop teaspoonfuls onto lightly-oiled baking sheet(s).
- Bake 375° for 10-15 minutes or until browned.
