Caldo Verde
A simple vegan soup
Ingredients:
- 1-2 vegetarian bouillon cubes
- 2# russet potatoes
- 6C-8C kale
- 1t-2t pepper
Steps:
- Boil a big pot of water with bouillon cubes
- Cube potatoes into bite-sized pieces and boil for 20-40 minutes, test with a fork
- Turn off the heat
- Add one bunch of chopped kale
- Simmer for two minutes
- Pepper to taste
Options:
- Add firm tofu cubes or substitute it for the potatoes.
- Add sauted onion and garlic.
