Almond Ginger Stew
A big pot of stew from leftover turkey or can be vegetarian too
Ingredients:
- 1-2 vegetarian bouillon cubes or turkey stock
- 1 onion
- 3-4 cloves of garlic
- 1#-2# turkey scraps, or cubed firm tofu or tempeh
- 1# diced tomatoes
- 1C-2C almond butter
- 1/2C your favorite rice (i.e. Basmati/wild mix)
- 4T-6T fresh chopped ginger
- 2t-4t cayanne pepper
Steps:
- Simmer a big pot of water with bouillon cubes or boil turkey bones and some scraps. Remove bones after an hour.
- Saute chopped onion and chopped garlic in some oil, and then add to the pot.
- Add tofu or turkey scraps.
- Add diced tomatoes, almond butter, rice, ginger and cyanne pepper.
- Simmer for an hour.
Options:
- Add potatoes and/or sweet potatoes.
- Add coriander.
